The variety has been preserved on the farm for generations, but the processing here takes it in a very modern direction.\u003c\/p\u003e\n\u003cp\u003eAfter selective picking and sorting, the coffee moves through a washed botanical fermentation. Fresh cascara juice is used to build the fermentation mosto, with food-grade botanical aromatic extracts of banana and blood orange added during fermentation. The coffee spends around six days in a controlled fermentation before being thoroughly washed and slowly dried on covered raised beds.\u003c\/p\u003e\n\u003cp\u003eBig things like Banana, tropical fruit, vanilla and milkshake like texture.
